Summer's Not Over Smoothie Bowl

Here in the midwest, it seems like summer barely gets started, and then all of a sudden we're surrounded by back to school supplies and pumpkin decor! I don't know about you, but I'm not ready for summer to be over just yet...


If you're like me and wishing you could keep summer going for just a little bit longer, you'll love this gorgeous (and nutritious!) Dragon Fruit Smoothie Bowl! I've been loving experimenting with dragon fruit lately, and the brilliant color it can give to smoothies and even water. But, did you know this beautiful fruit is LOADED with good-for-you nutrients?


Dragon Fruit (Pitaya) Stats:

  • High in antioxidants, fiber, magnesium, and B vitamins + prebiotics which help build a healthy gut microbiome

  • Discovered in Central and Southern America and brought to Southeast Asia (where it became known as dragonfruit)

  • The dragon fruit is actual a cactus fruit and has a mild, delicate flavor

  • Dragon fruit seeds add a nutty flavor and contain healthy essential fatty acids like omega-3 and omega-6.

  • Dragon fruit pulp is rich in antioxidants such as vitamin C which helps fight free radicals, boosts immunity and boosts collagen production — helping to keep your skin looking healthy and young





If you know me, you know I love a good smoothie bowl — I always have fun choosing which super foods to top it with! This smoothie bowl is packed with nutrients to keep you feeling refreshed, glowing and feeling those good summer vibes!


Smoothie Ingredients:

  • 1 cup frozen red dragon fruit (unsweetened / Try Pitaya Plus brand)

  • 1/2 cup frozen raspberries (unsweetened / or other red/purple fruit of choice)

  • 1 medium ripe bananas previously peeled, sliced, and frozen

  • 1 serving vanilla plant-based protein powder (unsweetened / Try Tone It Up brand)

  • 1 tsp maca powder

  • 1/2 cup coconut milk (unsweetened / or other nut milk of choice) Add more nut milk to desired smoothie thickness

Super Food Toppings (Optional):

  • Hemp seeds

  • Goji berries

  • Chia seeds

  • Cacao nibs (unsweetened)

  • Berries

Directions:

Blend all ingredients together in a blender. Add more nut milk until desired smoothie thickness. Pour into a bowl and have fun topping your smoothie with some delicious super foods. Enjoy!
